This week, I celebrated spring by harvesting from my garden. One of my favorite dishes that I made this week was a quick salad using fresh dinosaur kale (Lacinato) from the garden. Below are a few photos showing the steps I took to make the salad from harvest to table.
I harvested a few leaves of dinosaur kale from my garden.I chopped the dinosaur kale.I gave the freshly harvested dinosaur kale a quick ice bath to make it more crunchy, crisp, and chilled.I added hearts of palm, homemade chickpeas with tons of herbs and seasoning, apples, and beets to the top of the salad.I added jalapenos to my salad before dressing it with olive oil, aged balsamic, salt, and pepper.I’d love to know your answer to this question!
