This week, I celebrated spring by harvesting from my garden. One of my favorite dishes that I made this week was a quick salad using fresh dinosaur kale (Lacinato) from the garden. Below are a few photos showing the steps I took to make the salad from harvest to table.

**I harvested a few leaves of dinosaur kale from my garden.**

**I gave the freshly harvested dinosaur kale a quick ice bath to make it more crunchy, crisp, and chilled.**

**I added hearts of palm, homemade chickpeas with tons of herbs and seasoning, apples, and beets to the top of the salad.**

**I added jalapenos to my salad before dressing it with olive oil, aged balsamic, salt, and pepper.**
